DECAF SC MISAK

Tasting Notes: Caramel, Brown Sugar, Dark Chocolate, Malt & Black Tea

The Decaf SC MISAK coffee is produced using the E.A. (Ethyl Acetate) process, a natural method that preserves the coffee's flavour and aroma while removing the caffeine.

Ethyl Acetate is created from fermented sugar cane and is commonly used in food products due to its natural occurrence in fruits. Selected coffee beans are soaked in a solution of water and E.A., which binds to the caffeine and extracts it from the beans. After the caffeine is removed, the beans are steamed to eliminate any remaining E.A.
This process results in decaffeinated coffee beans that maintain their original flavour and can be roasted and brewed normally.

EL EMBRUJO

The name “embrujo” comes from the Spanish word for “spell”. Ignacio believes that truly excellent speciality coffee will evoke the “magic of coffee” for drinkers. This delicious Mr. Hat Natural from Eje Cafetero is indeed a magical experience and we think you’ll enjoy it for its notes of tangy passion fruit, cacao liquor and yellow fruits.

Ignacio Rodriguez’s father purchased the first 12 hectares of Finca La Palmera over 50 years ago. Through tireless work, he continued expanding the farm, which reached 170 hectares by the time Ignacio inherited it. Today, Ignacio applies the same spirited focus to producing specialty-quality coffees.

The name “embrujo” comes from the Spanish word for “spell”. Ignacio believes that truly excellent speciality coffee will evoke the “magic of coffee” for drinkers. To this end, he is focused on transitioning from traditional agriculture to a more speciality focus. Ignacio is building a laboratory and microbiology lab to help him better understand the process at the biological level and ultimately improve his processing for consistency and flavour.

Ignacio employs 48 women year-round. These women, many of whom are single mothers supporting their families, ensure high quality by sorting cherries and parchment to remove any defective beans.

Mr. Tinto is a profile-driven blend. Processing has been designed to achieve these flavour profiles.

EL ROSARIO

This coffee was brought to us by Cofinet and is produces a sweet and balanced brew, whether you are making a filter or espresso-based coffee. Popayán is located in the department of Cauca at 1.700 m.a.s.l. The regions topography is perfect to grow exceptional coffee.

The so-called 'Meseta de Popayan' is sheltered by the Andes mountain range which helps generate homogeneous climatic and altitudinal characteristics. The result is a balanced cup profile with floral and caramel notes. This project is a collaboration of approximately 65 growers who contribute to this program. The program also encourages farmers to focus on quality based farming. Our contribution to pay a premium price above the local market prices to ensure this type of projects do not only continue but also can create and bring change to the local farmer and communities.

ETHIOPIA YIRGACHEFFE

Tasting Notes: Floral, citrus, Bright acidity, Berries, Melon, Light body.

Yirgacheffe coffee is a wet processed coffee grown at elevations from 1,700 to 2,200 meters above sea level, and is the considered the best high grown coffee in southern Ethiopia, where coffees grow slowly due to the altitude, allowing additional time for the tree to deliver nutrients to the coffee and develop the best flavors, this is an exotic coffee region known for fine coffees. A fine Ethiopian Yirgacheffe coffee displays a bright acidity along with intense, clean tastes and a complexity of floral notes in the aroma. Cupping notes frequently mention the aftertaste being vibrant, and the coffee may exhibit undertones of berry or wine.
