Banka, Yunnan.

Most of us have never heard of coffee coming from China. Yet, the art of growing coffee arrived to China 3 decades ago and today we can enjoy the outcome of their hard work. Featuring for April a coffee from the Banka farm, in Yunnan province, China. A project that creates opportunities for Yunnan farmers to engage in sustainable production and practices to care about sustainability, traceability, and transparency.

The Banka coffee goes through a delicate and detailed process. Once picked, the cherries (this is the form it takes before it becomes a coffee bean) are run through a (wet) optical colour sorter, and then fermented in its cherry form for two days. Finally, they are spread and dried on raised beds on the drying patio.

Once the coffee is finally with us we take great care to make sure all those months of hard work by the farmers does not go to waste in  the 10 minutes it takes to roast a batch. We carefully hand roast each batch to a light roast making sure we showcase all these wonderful flavours of apple, lime and brown sugar.
